More precisely, in the process of fermentation of lactose in milk, milk acid is created, because of which milk is no more called like that, but yogurt. It is recognizible for its specific taste. Many particular bacteria are responsible for this (Lactobacillus rhamnosus, Lactobacillus acidophilus, Enterococcus faecium, Lactobacillus bulgaricus, Streptococcus thermophilus, etc...). So, there is yoghurt that contains Lactobacillus acidophilus bacteria, or for example the combination of Enterococcus faecium and Streptococcus thermophilus bacteria. In any case, you should know that yogurt is very nutritional and healthy food.

This white drink comes from Middle East and can be found in old records from Genghis Khan. Nowadays, the regular use of yoghurt is widespread all over the planet, and it is most used in Bulgaria on daily basis. And it is a weel-known fact that Bulgarians are a long-living nation.

Every person who takes care of healthy diet should consume yogurt regularly, as this food has high nutritional value and positive effect on body, and still is low in calories. It's a very rich source of proteins and calcium. Beside that, it increases the absorption of vitamin B and calcium in human body, that are consumed through some other foodstuffs. Regular consumption of yogurt definitely has positive influence on whole body, it refreshes and extendes lifespan.

So, let's enumerate some of the most important health benefits of yogurt:

How to make yogurt?

As we have said, yogurt is made of milk, so we can make it by ouselves at home. If you're interested in making yogurt, here is a simple recipe.

To make 1l of yoghurt you'll need just 1l of milk and 0,5dl of yoghurt, as it already contains bacteria that are needed for the process of fermentation. Slowly heat the milk so it reaches the temperature of 40-42 C. Then, add 0,5 dl of yogurt into milk, mix it, cover it and leave it in warm place for 3-4 hours. That is the usual period of time in which milk should be transformed into yogurt. After the preparation, keep the yogurt in fridge. If you like fruit yogurt, just add previously mixed fruit according to your own preferences into it (for example, about 300 gr. of blueberry, strawberry, raspberry, apricot,...). If this fruit is too sour, you can add some sugar. And that's all the magic!
